How can I mention my ambitions without scaring the recruiter?

This position is not an end in itself, as you plan to evolve in the coming years. Only mention your ambitions with tact and lucidity.
Mention your adaptability. Managers must know how to evolve, change jobs to meet the needs of their company. When a recruiter asks you to discuss your "career plan", mention your adaptability, without showing excessive ambition.
Stay humble so as not to appear pretentious. Mention your aspirations - more responsibilities, broader functions - without mentioning specific dates or titles. With few exceptions: if you are aiming for a junior product manager position, it is perfectly normal to eventually aspire to a senior position. You are there above all to prove your interest in this position, before seizing the opportunities that will arise.
Show your interest in mobility. Some companies maintain a strong culture of professional mobility, sometimes displayed on their website (range of offers available and professions). Without forgetting why you were called (staying in the position for three or four years seems a minimum), show your interest in this approach.
